I cooked these cute little iced star biscuits today because the cookie jar was empty and I had two very sad little girls wanting cookies. When I offered to make them some biscuits their mood changed immediately. I couldn’t help but make little star cookies for my little stars, and, of course they loved them – like the little stars that they are.

These biscuits take a little bit longer to make than others because you need to chill the dough before you cut the shapes. You also need to cool the biscuits before you ice them unless you’d prefer to eat them plain. I made a really firm icing sugar for the edges, and a slightly runnier one to fill the centre.

Prep: 10-20 minutes plus 30 minutes chilling time

Cook: 10-12 minutes

Makes: 20 (depending on what size you make)

 

Ingredients

  • 60 g butter, softened
  • 1/2 tsp vanilla essence
  • 1/3 cup sugar
  • 1 egg
  • 1 tsp milk
  • 2/3 cup SR flour
  • 1/3 cup plain flour
  • icing sugar/food dye/sprinkles to decorate (optional)

 

Method

  1. Beat the butter, sugar and vanilla until creamy.
  2. Add the egg and milk and beat well until incorporated.
  3. Stir in the flours until a soft dough is formed.
  4. Transfer the dough to a lightly floured surface and knead for a minute or two until smooth.
  5. Cover the dough, then refrigerate for 30 minutes.
  6. Preheat the oven to 180C and line two baking sheets with baking paper.
  7. Roll the dough out (between 2 sheets of baking paper) until the dough is 3-5mm thick. Cut your shapes and place them on your baking tray 3 cm apart. Re-roll any remaining dough and repeat until all the dough is used.
  8. Bake for 10-12 minutes then allow the biscuits to cool on the baking tray for 5 minutes before transferring them to a wire rack to cool completely.
  9. Make your icing and decorate away 🙂
