Sausage Rolls

Delicious sausage rolls are something that used to be a tuck shop treat or a quick stop at a bakery for a meal when travelling. These days I have no tuck shop and have started to make my own sausage rolls. I know you can buy frozen sausage rolls for a decent price, mostly lacking in flavour by the way, so a lot of people wouldn’t bother trying to make them at home. I say do yourself a favour and start making them right away. Home made sausage rolls are so much tastier than the store bought frozen variety and they are so simple to make.

Sausage rolls are a great idea for parties, morning or afternoon teas. You could make a plate of party sized sausage rolls and some cheese and bacon scrolls and everyone will think you are an amazing cook who spent hours in the kitchen just for them.

 

 

Prep: 15 minutes

Cook: 20 minutes

Makes: 20 sausage rolls or 60 party sized sausage rolls

 

Ingredients

  • 500 g sausage mince
  • 3-4 carrots, grated finely
  • 1 onion, grated finely
  • 2 eggs
  • 3-4 cups fresh breadcrumbs (not the toasted variety)
  • salt, to taste
  • 5 sheets frozen puff pastry, thawed

 

Method

  1. Preheat oven to 200C and line two baking trays with baking paper.
  2. Combine the mince, carrots, onion, eggs, breadcrumbs and salt in a bowl and mix well. I find using your hands works a lot better than a spoon.
  3. Cut each sheet of puff pastry in half lengthways.
  4. Divide the mixture evenly between the 10 pieces of puff pastry. Spread the mixture down the centre of the pastry like a log, leaving approx 3-4 cm each side.
  5. Roll up the puff pastry to enclose the mixture and place them seam side down. This will have made 10 very long sausage rolls. Cut each sausage roll in half so you have 20 sausage rolls.
  6. If you are wanting to make party sized sausage rolls, use the back of your knife to place two indents into the pastry, in each sausage roll, where you will cut them after they have baked. They should look fairly similar to the store bought frozen ones at this stage.
  7. Bake for 20 minutes until golden and cooked through.
