Quick and Easy Veggie Spaghetti

Are you looking for something colourful and fun for dinner? This quick and easy veggie spaghetti tastes great, serves 6 AND is lovely and colourful. It may not sound exciting but the different tastes all combine into something fantastic. I love that this meal is so easy to cook, and that my entire family loves it.

Prep: 10 minutes

Cook: 30 minutes

Serves: 6



  • 1 x 500 g packet dried spaghetti
  • 2 zucchini, diced
  • 2-3 tomatoes, diced
  • 1 capsicum, sliced
  • 1/2 onion, diced
  • 1/2 cup water
  • lemon juice
  • 1 tsp oil
  • salt and pepper



  1. Cook pasta according to packet directions. Once the pasta is cooked, drain.
  2. In the meantime, heat the oil to a medium heat in a large saucepan.
  3. Fry the onions, zucchini, tomato and capsicum until the onion has softened.
  4. Add 1/2 cup water and simmer until the liquid has reduced by half.
  5. Add the pasta to the vegetable mix and stir to combine.
  6. Add lemon juice, salt and pepper, stir and taste. Add more salt and pepper if needed.
