Mexican Chicken Tortillas

Mexican food is loved by everyone I know but most use those prepacked packages you buy from the store. Sure, they’re easy, they’re convenient, and, you know they are going to taste the same every time you make them.

How about you mix it up and start to make your own? It’s more cost effective, you know what’s in it, and you can tweak it to suit your family’s preferences. The home made tortillas are fantastic and taste so much better than the store bought ones. If you’re family would prefer beef to chicken you could always use chilli con carne or my Mexican mince as the fillings instead.

 

Prep: 20 minutes

Cook: 10 minutes

Serves: 4

 

Ingredients

  • 250 g chicken breast or thigh, sliced thinly
  • 1 onion, sliced thinly
  • 1 1/2 tsp cumin
  • 1/2 tsp chilli
  • 1/2 tsp garlic powder
  • 1 tsp salt
  • 1 tsp flour
  • 1/2 cup water
  • 1 tsp oil
  • salad and sour cream to serve
  • 8 Tortillas

 

Method

  1. Heat the oil in a fry pan to a medium heat, add the onions and cook for 5 minutes until they are soft.
  2. Add the chicken to the pan and cook till browned.
  3. Add the remaining ingredients and cook until the chicken is cooked through and the sauce has thickened.
  4. Serve on warm tortillas (recipe here) with salad and sour cream.
