Zucchini and Potato Fritters

Zucchini and potato fritters are so easy to make, they taste delicious and even though the name says “Zucchini and Potato” you can use any vegetables you have available.

These fritters make a great lunch or dinner, they are great for breakfast and you can serve them as a morning or afternoon snack, you can even make a sandwich out of them. Best of all, you can make a bit batch up and freeze them to eat another day. 

Zucchini and potato fritters are a cheap and effective way to get your children to eat more vegetables. They are a great way of using up vegetables that have seen their best days, and they are so easy to make that older children could make them.

 

Prep: 10 minutes

Cook: 15 minutes

Makes: 12-18

 

Ingredients

  • 2 potatoes, grated
  • 1 large zucchini, grated
  • 1 small onion, diced
  • 1 cup SR flour
  • 1 egg, whisked
  • 1 cup milk
  • 1 tsp paprika
  • salt and pepper, to taste
  • 2 tbs oil

 

Method

  1. Combine the potatoes, zucchini, onion, flour, egg, milk, paprika and salt and pepper in a bowl and mix well until a the vegetables are surrounded with a pancake like mixture.
  2. Heat the oil in a frypan to a medium heat, add spoonfuls of mixture to the pan and cook on each side for 3 minutes until golden and cooked through. Repeat with remaining mixture.
