Weet-Bix slice is one of those recipes that you usually make for a school fete when you’re trying to only use ingredients you have in the cupboard.  It could be argued that  Weet-Bix slice is a healthier option than a lot of other slices (but I won’t weigh in on that argument, I just think it’s delicious), and its easy to make so little helpers can have fun helping you crush the Weet-Bix up. That is what makes it so perfect for the $200 per month challenge. You already have all of the ingredients so why not make something the entire family will enjoy?

Serves: 12

Ingredients

  • 4 Weet-Bix, crushed (or other wheat biscuits)
  • 1 cup SR flour
  • 3/4 cup brown sugar
  • 150 g butter, melted
  • 3/4 cup icing sugar
  • 2 tbs cocoa powder
  • 50 g butter, melted
  • 2 tbs boiling water

Method

  1. Preheat oven to 180C and line a slice tray.
  2. In a bowl, add the weetbix , flour, sugar and 150 g of melted butter. Mix to combine.
  3. Press firmly into the slice tray and bake for 15 mins.
  4. Allow to cool completely.
  5. In a small bowl, add the icing sugar, cocoa powder, 50 g melted butter. Mix all ingredients well and gradually mix in the water. Pour the icing over the slice and spread it evenly.
  6. Once the icing is set,  divide into 12 slices.
