Vegetable Fritters

Vegetable Fritters are a like a little vegetable pancake. They are a fun way of trying to get your children to eat their vegetables, they can be served as a side dish, as a main dish with salad or as a fun little finger food with some sauce to dip them in. They don’t take long to prepare and are very easy to make.

 

Prep: 10 minutes

Cook: 10 minutes

Serves: 6 as a side

 

Ingredients

  • 80 g SR flour
  • 2 cups mixed vegetables (cooked, and cooled)
  • 2 eggs, whisked
  • salt to taste
  • 1 tbs oil

 

Method

  1. Add the flour, vegetables, eggs and salt to a bowl and mix well.
  2. Heat the oil in a fry pan over medium heat and, working in batches, add a tablespoon of mixture to the pan at a time. Cook each side for 3-4 minutes until golden and cooked through. Repeat until all the mixture is used. Drain on paper towel then serve.
