Tuna and Broccoli Bread Bake

Tuna and Broccoli Bread Bake is a wonderful dish that is made using items you probably already have in your fridge and pantry but just never thought of putting them together to form a dish. I know I had never thought to make a bake out of bread but this recipe truly amazed me – and that is hard to do considering I am not a big fan of tuna, especially the canned variety.

This bake had a wonderfully crispy and cheesy top that really was the star of the meal, but the combination of broccoli and tuna cannot be underestimated. All the flavours melded together to create a surprisingly delicious meal that was easy to create and a bit fun to put together. It does take a while to bake so only make this dish when you have at least an hour before dinner time.

Ingredients

  • 250 g broccoli, cut in florets
  • 10 slices white bread.
  • 425 g tin of tuna, drained and flaked
  • 1 small onion, diced
  • 8 eggs
  • 1 cup milk
  • 2/3 cup cheese, grated
  • salad, to serve

 

Method

  1. Preaheat your oven to 180C and lightly grease a baking dish.
  2. Place the broccoli into a microwave safe container and sprinkle 2 table spoons of water over the broccoli. Cover and cook on high for 2 minutes. The broccoli should be bright green, rinse the broccoli under cold water to stop the cooking process and drain well.
  3. Remove the crusts from your bread and cut each slice in half.
  4. Cover the bottom of the baking dish with slices of bread.
  5. Combine the broccoli, tuna and onion and place the tuna mixture evenly on top of the slices of bread.
  6. Cover the tuna mixture with another layer of bread slices.
  7. Place the eggs and milk into a bowl and whisk to combine. Pour the egg mixture of the top layer of bread, the sprinkle cheese evenly over the top.
  8. Bake for 60 minutes or until set. Rest in the baking dish for 5 minutes before slicing.
