Deliciously Yummy Home Made Quesadillas

What’s a Quesadilla you may be asking? A Quesadilla is two tortillas filled with cheese and other savoury ingredients and grilled. A bit like a toasted sandwich but using tortillas instead.

The great thing about a Quesadilla is its versatility, you can put last nights leftovers in the centre, you can have it as lunch, dinner or a snack. It’s great with plain fillings like cheese, cheese and tomato, chicken and cheese, chicken with cheese and mushrooms. The list is endless. Try anything you can think of and you’ll soon have some go to favourites.

This is a quick and easy version you can make if you have no leftovers in your fridge. Other fillings you could use are chilli con carne or my Mexican mince.

I have a sandwich press so I cook my Quesadillas in my sandwich press. If you do not have one, you can use a large frying pan and flip the Quesadilla half way through cooking.
