Melt and Mix Chocolate Cake

A melt and mix chocolate cake is a really handy recipe to have on standby. The best thing it has going for it is that you don’t need to get out the beaters! It’s perfect for days when you want to quietly make a little treat for the family.

Another good thing about this chocolate cake is that it’s really easy to make. Miss nearly 2 and miss just turned 4 both helped with everything. All I had to do was measure the ingredients and supervise. I can’t wait for the day when they can make it by themselves and clean up afterwards!

I decorated mine with a simple icing (icing sugar, food colouring and water) and added a couple of wafer daisies from the supermarket.

If you’re looking for something a bit more gourmet, you could try making this vanilla magic cake, or lemon meringue cupcakes. OR if you’re looking for something a bit easier/quicker you could always make this nutella mug cake. Why not make all 3!

Cook: 50-60 minutes

Ingredients

  • 265 g brown sugar
  • 3/4 cup milk
  • 125 g butter, cubed
  • 30 g cocoa powder
  • 1/4 tsp bi carb soda
  • 150 g SR flour
  • 2 tbs plain flour
  • 3 eggs

 

Method

  1. Preheat the oven to 160C, grease and line a 19 cm round cake tin.
  2. Place the sugar, milk, butter, cocoa powder and bi carb into a large saucepan over medium heat. Stir until the butter has melted and the mixture is smooth and well combined. Set aside to cool for 5 minutes.
  3. Stir through the SR flour, plain flour and eggs.
  4. Pour the mixture into your cake tin and cook for 50 minutes.
  5. Allow cake to cool in the pan for 5 minutes before transferring it to a wire rack to cool completely.
