Butter biscuits are quick and easy to make, they don’t have many ingredients but you can do so much with them. Make them plain and add some icing and sprinkles, add some peppermint essence to the biscuit mix and then coat them in chocolate after they’ve cooked, mix in chocolate chips etc. You can do whatever you like with these biscuits, they are the perfect base.

Ingredients
- 125 g butter, room temperature
- 1/3 cup sugar
- 1 tsp vanilla essence
- 3/4 cup SR flour
- 2/3 cup plain flour
- 2 tbs milk
Method
- Line 2 baking trays with baking paper.
- Beat the butter, sugar and vanilla until just combined.
- Add the flours and milk to the bowl and mix until a soft dough forms. The dough shouldn’t stick to your hands.
- Roll the dough into 20 equal sized balls and place them on the baking trays allowing room for spreading.
- Use a fork or your fingers to flatten the biscuits.
- Place the trays in the fridge for 20 minutes to chill.
- Preheat oven to 160C and then bake for 15-20 minutes.
- Allow to cool on the tray for 5 minutes before transferring to a wire rack to cool completely.
