My family love to make these M&M’s cookies when we need a BIG batch of cookies. This recipe makes a mammoth 48 regular sized cookies and is so easy and quick to make. There is barely anything to clean up either. What I really love about this recipe is that I can speed the process up by rolling the dough into balls while my girls decorate them with the M&M’s. If we have more time to spare, the girls love to roll the dough as well.
These M&M’s cookies spread quite a bit in the oven so make sure you allow plenty of room for them on the baking trays.
Other cookies/biscuits you might like to try include iced star biscuits, butter biscuits, milo biscuits or jam drops.
Prep: 15 minutes
Cook: 12 minutes
Makes: 48
Ingredients
- 150 g butter, cubed (room temperature)
- 1 cup sugar
- 1 tsp vanilla essence
- 1 egg
- 2 1/2 cups SR flour
- 180 g family sized bag of M&M’s
Method
- Preheat oven to 180C and line your baking trays with baking paper. (I used 4 baking trays.)
- Beat the butter, sugar, vanilla and egg until pale and creamy.
- Mix in the flour until a soft dough has formed. If the dough is too soft, you can add another tablespoon of flour.
- Use a teaspoon to scoop the dough and roll into small balls. Place the rolled dough onto the baking trays and flatten gently with a fork. Repeat until all the mixture is used.
- Press 5 M&M’s onto the top of each cookie.
- Bake for 12 – 15 minutes until lightly golden.
- Allow the cookies to cool on the tray for 5 minutes before transferring them to a wire rack to cool completely.
