I’ve never really put much thought into what you can make using mandarins, they’ve always been eaten like a piece of fruit would. This year I was given a bag of mandarins which really got me thinking about it.
This cupcake recipe is really easy to prepare, I think it has a more sophisticated taste than your regular party cupcake, like the one you might get at a High Tea, but it would easily be at home on a party table as well. It is a cupcake everyone can enjoy. You can decorate them properly, or, a sprinkle of icing sugar adds the perfect (and the easiest) finishing touch.
