Gluten Free Gingerbread Cookies

My family loves gingerbread cookies but some of my extended family are gluten free and I hate for them to miss out.

This is the recipe I use when making gingerbread for the family. You can use it to make cookies, or gingerbread houses. Eat them decorated or plain.

They also make a great gift if you wrap them in some cellophane with a pretty ribbon. Enjoy!

  • 2 cups gluten free flour
  • 1 tsp baking powder
  • 1/2 tsp bi-carb soda
  • 1 tsp cinnamon
  • 2 tsp ground ginger
  • 1 pinch of salt
  • 1 egg
  • 125 g butter
  • 1/4 cup golden syrup
  • 1/2 cup brown sugar


  1. In a bowl, cream the butter and sugar.
  2. Add the golden syrup and egg. Mix until combined.
  3. Sift together all the dry ingredients and then add them to the wet ingredients ( I like to use a separate bowl for this).
  4. Mix all the ingredients together then place the dough in the fridge for 1 hour.
  5. Remove the dough from the fridge, knead lightly on a floured surface.
  6. Roll the dough out to 5mm thick and use cookie cutters to cut it into shapes. Place back in fridge until the oven has heated up and you are ready to bake.
  7. Preheat the oven to 170C and line a baking sheet.
  8. Bake for 15 minutes or until well browned.
  9. Leave to cool on trays for 5 minutes before transferring to a wire rack to cool completely.
  10. You can now decorate your cookies, or eat them plain.
