If your family is anything like mine, they absolutely love banana bread. I love banana bread too, it’s delicious, it’s convenient, it can be a snack, breakfast, dessert or even something to pop in the freezer and defrost when guests arrive. It’s fast to make, it’s a one bowl wonder and every last morsel always gets eaten. A true winner!
If you have pears, you could always make a banana and pear bread or if your family don’t like bananas you could make a delicious coconut loaf.

Makes: 1 loaf
Ingredients
- 1 cup SR flour
- 1 cup caster sugar
- 50 g butter, melted
- 1 egg, lightly beaten
- 1 tsp vanilla essence
- 1/4 cup milk
- 1/2 cup mashed banana
Method
- Preheat oven to 180C and grease and line a 7 cm deep, 10 x 20 cm loaf tin.
- Place all ingredients into a large bowl and mix well to combine.
- Pour the mixture into the prepared loaf tin and bake for 30 -35 minutes or until a skewer inserted into the centre comes out clean.
- Allow to cool in pan for 10 minutes before turning out onto a wire rack to cool completely.
