Lemon Delicious Slice

Lemon delicious slice is a sweet yet zingy slice. It’s great for morning teas, afternoon teas, snacks, or serve it with some cream for a truly amazing dessert. My family loved this slice, but a small amount goes a long way.

Makes: 24 pieces



  • 150g butter, melted ¬†and cooled
  • 1/2 tsp vanilla essence
  • 1/3 cup sugar
  • 1 tbs corn flour
  • 1 1/3 cup plain flour


  • 4 eggs
  • 1 tsp lemon zest
  • 1/3 cup plain flour
  • 1 1/3 cups sugar
  • 2/3 cup lemon juice
  • icing sugar, to serve


  1. Preheat the oven to 180C and grease and line a slice pan with baking paper.
  2. Make the base first by combining the butter, vanilla, sugar, corn flour and plain flour. Mix them together to form a dough and then press the dough into your slice pan.
  3. Bake the base for 15 – 20 minutes until golden. Set it aside to cool.
  4. To make the filling, mix together the eggs, lemon zest, flour and sugar. Once combined, mix in the lemon juice and pour the mixture over the top of the base.
  5. Bake for 15 minutes until just set and then allow to cool in the pan completely.
  6. Dust the slice with icing sugar and then slice and serve.

Note: It is best to dust the slice with icing sugar just before serving as the icing sugar tends to disappear into the slice after a while.
