Honey Glazed Carrots

Are you looking for a side dish that’s a little bit different to your normal? I really like these honey glazed carrots for a few reasons, the first is that they are really easy to prepare and they don’t take up any oven space when you’re cooking a roast. The second is that they are really nice – and that’s coming from someone who doesn’t overly like carrots.

I like to turn the heat up a bit to crisp them before serving, but if you do, be careful you don’t burn the honey.

These are perfect served with roast pork, brown sugar glazed ham and the roasted lemon chicken shown with them in the photo.

 

Prep: 10 mins

Cook: 15 mins

Serves: 8

 

Ingredients

8 carrots, sliced in quarters

2 tbs honey

2 tbs butter

 

Method

  1. Steam the carrots until they are tender.
  2. Combine the honey and butter in a large frying pan over medium heat, stir until the butter has melted.
  3. Place the carrots in the frying pan in a single layer. Gently coat the carrots in the glaze. Serve.

 

Tip: If you would like your carrots crispier, increase the heat for a few minutes and turn the carrots to avoid burning.
