Quick and Easy Version of Quiche Lorraine

I love quiche, I think it’s a tasty meal that is suitable for breakfast, lunch or dinner. You can eat it hot or cold, and, you can change the fillings to whatever items are in your fridge. In this case I had ham and cheese so I made a quick crustless Quiche Lorraine and I think it was pretty awesome.

Typically quiches have a crust to them but when you’re in a rush this crustless version is perfect. You can mix it up and have it in the oven baking in no time at all. I honestly believe you’re not missing out on much by not having a crust, in fact, I prefer it this way. I’m all about the soft eggy centre and as this bakes it kind of forms it’s own edges so it’s still easy to cut and plate up.

For those of you who MUST have a crust, you could always lay a sheet of puff pastry in the bottom of your pie dish.

While the oven is on, you could consider making some easy chocolate muffins  or cupcakes.

 

Prep: 5 minutes

Cook: 40 minutes

Serves: 4

 

Ingredients

  • 100 g diced ham
  • 4 eggs
  • 1/2 cup cream
  • 50 – 75 g grated cheese
  • 1/2 an onion, chopped finely or grated
  • salt and pepper

 

Method

  1. Preheat your oven to 180C and grease a pie dish.
  2. Place the egg and cream in a bowl and whisk together until well combined.
  3. Stir in the remaining ingredients.
  4. Pour the mixture into your pie dish and bake for 40 minutes until cooked through and golden on top.

 

Note: The quiche will puff up and look very impressive as it cooks, unfortunately as it cools down it will deflate a little. Don’t be disappointed, this is supposed to happen
