Quick and Easy Lemon Tart

Have you ever wanted to make a lemon tart but were put off by having to make a lemon curd first? With this recipe you don’t have to! In fact, because you’re using ready made pastry as well, the whole thing really only takes about 10 minutes of your time. Yes, there’s still baking and wait times but this has got to be one of the easiest lemon tarts you can make.

If you love citrus, you could try these mandarin cupcakes or mandarin with lemon syrup cake.


Prep: 15 minutes

Cook: 50 minutes

Serves: 8



  • 1 sheet frozen shortcrust or puff pastry, thawed
  • 1/2 cup sugar
  • 1/2 cup lemon juice
  • 1/2 cup cream
  • 4 eggs
  • icing sugar, for dusting



  1. Preheat oven to 180C and grease a pie dish.
  2. Line the pie dish with the thawed pastry, trimming the edges and using them to fill the sides.
  3. Blind bake for 15 minutes, remove the paper and weights and bake for a further 5 minutes.
  4. Place the sugar, lemon juice, cream and eggs in a bowl and mix together. Pour the filling into the pastry case and bake for 30-35 minutes until just set. The tart should still wobble a little.
  5. Let cool in the pan, dust with icing sugar  and serve.
