Nachos with Carrot and Potato Chips

Everyone likes nachos but how often do you have corn chips in the cupboard ready and waiting for when you need them? I rarely have corn chips so when I make nachos I often substitute the corn chips for carrot and potato chips. It’s still great finger food and makes me feel like I’m making a healthier choice for my family.

Prep: 15 mins

Cook: 45 – 60 mins

Serves: 4

 

Ingredients

  • 4 cups chilli con carne
  • 4 tbs sour cream
  • 400 g potatoes, peeled and sliced into chips
  • 4 carrots, peeled and sliced into chips
  • 1 tbs oil
  • salt

 

Method

  1. Preheat oven to 200C and line a baking tray.
  2. Toss the chips in the oil and lay single thickness on the baking tray. Bake for 45-60 mins until cooked through and crisp.
  3. Heat the chilli con carne in the microwave and serve with the baked chips. I like to add sour cream on the side.
