This should really be called “Amazing Soup”, its basically a tomato soup with some vegetables in it and it is so tasty! I am not a bean lover and I was dubious about trying this recipe at first but it was love at first mouthful when I made this and I know it will be a recipe that will be made time and again in my house.
It’s a hearty, healthy soup and a side of bread is essential.

Cook: 20 minutes
Serves: 6-8
Ingredients
- 1 tbs oil
- 2 onions, diced
- 1 tsp garlic powder
- 200 g bacon, diced
- 2 tbs tomato paste
- 400 g potatoes, diced
- 2 tsp sugar
- 2 x 400 g tins diced or crushed tomatoes
- 2 or 3 x 400 g tins four bean mix (I like tomato soup so I only add 2, but bean lovers should add 3)
Method
- Heat the oil in a large saucepan over medium high heat, add the onions and bacon and cook until they have softened.
- Add the potatoes and cook for a further 3 minutes.
- Add the tomato paste and cook for 1 minute whilst stirring.
- Add the rest of the ingredients except for the four bean mix. Cover and let simmer until the potatoes are cooked through.
- Add the four bean mix and cook until heated through.
