My family loves pies! Anything that comes encased in golden fluffy puff pastry is heaven to us. Most people would probably make toasted sandwiches to use up their leftovers but we like to turn them into pies, pasties and sausage rolls instead. The pastry makes it feel like you’re eating an entirely different meal and it’s quick and easy to prepare.

Prep: 10 minutes

Cook: 20 minutes

Serves: 4

Ingredients

Method

  1. Preheat oven to 190C and line a baking tray
  2. Cut each sheet of the puff pastry into 4 squares
  3. Spread approx 1/2 cup filling on 4 of the squares, leaving a 1cm border around the edge. Top with the remaining squares and using a fork, press the edges of the pastry together to seal.
  4. Using a pastry brush or you finger tips, very lightly oil the pastry. This will encourage it to go golden in the oven.
  5. Bake for 20 minutes until puffed and golden.
