Curried Sausages and Rice

This recipe includes lentils to stretch your meal further. This recipe is enough to cover 4 main meals as well have some leftover to turn into a pie.


Prep: 5 minutes

Cook: 40 minutes

Serves 6-8 (if you don’t leave some to make a pie)



  • 8 sausages, each sausage cut into 5 pieces
  • 1 large onion, diced
  • 1 carrot sliced
  • 2 cups mixed vegetables
  • 2 cups rice
  • 150 g dried green lentils
  • 2-4 tsp curry powder
  • 8 cups chicken stock
  • 1 tbs oil



  1. In a large frypan, heat the oil to medium heat. Add the onions and cook for 5 minutes until onions have softened.
  2. Add the sausages and cook for 2-3 minutes until sausages have browned.
  3. Add the remaining ingredients and let simmer for 30-40 minutes until the rice is cooked and the lentils are soft.


Note: If you have the foresight the night before, the lentils could be soaked according to the packet instructions prior to cooking which could save time cooking.
