Creamy Curried Chicken with Rice

I love a creamy curry, it reminds me of a younger version of myself sitting around the dinner table with my family. Mum would make this and it seemed so exotic.

These days curries are a regular thing, every week we eat a curry of some sort at my house. It’s great!

I like this recipe because it’s not too spicy, the kids love it and it’s really easy to make.

 

Prep: 10 minutes

Cook: 40 minutes

Serves: 4

 

Ingredients

8 chicken drumsticks

2-3 cups mixed vegetables

300 ml thickened cream

3 tsp curry powder

1 tbs oil

2 cups rice (cooked according to the packet directions)

 

Method

  1. In a large frypan over medium heat, fry the drumsticks until browned.
  2. Add the vegetables, cream and curry powder and simmer until chicken is cooked through. This should take around 30-40 minutes depending on their size.
  3. Serve with rice
