Chocolate Self Saucing Pudding

There is something completely indulgent about a home made chocolate self saucing pudding. It’s amazing to watch what appears to be a watery mess turn into a magnificent cake with its own sweet chocolately sauce. Looking at the finished product might give you the illusion that this delicious dessert is hard to make, but it’s as easy as any cake mix to prepare.

My 3 year old loved helping me make our own chocolate self saucing pudding, she had a great time stirring the batter and sprinkling the sugar and cocoa over the top (she didn’t get to play with the boiling water though). Get your children involved too and they’ll be requesting this dessert weekly.

 

Prep: 10 minutes

Cook: 40 minutes

Serves: 4-6

 

Ingredients

  • 1 cup SR flour
  • 1 cup brown sugar
  • 1/2 cup cocoa powder
  • 60 g butter, melted and cooled
  • 1/2 cup milk
  • 1/2 tsp vanilla extract
  • 1 egg, whisked
  • 2 cups boiling water

Method

  1. Preheat oven to 160C and grease a 1.5 litre capacity baking dish.
  2. Add the flour, 1/2 cup sugar, 1/4 cup cocoa powder, butter, milk, vanilla and the egg to a bowl and stir to combine.
  3. Place the mixture into the baking dish and smooth the top with a spatula.
  4. Sprinkle the remaining sugar and cocoa across the top of the mixture.
  5. Carefully pour the 2 cups of boiling water over the top of the mixture, taking care to disturb the mix as little as possible.
  6. Bake for 40 minutes until the top is cake like.
  7. Let sit for 10 minutes before serving.
