Chilli Con Carne on Potatoes

This dish is a little bit like nachos but without the chips. I like to serve a my chilli con carne on top of cooked potatoes with some grated cheese and sour cream. It’s filling, healthy and tastes great.
It’s quick and easy to prepare and hopefully your family will enjoy it as much as mine do. Sometimes simple eating is really the best.
If you’re not a fan of chilli con carne, you could try using my Mexican Mince mixture instead. It has a few more vegetables in it.
Method
Make 1/2 batch of Chilli Con Carne to share between this recipe and the chilli con carne tortillas.
Peel and steam/microwave one large potato per person. When the potato is cooked top it with chilli con carne, sour cream and cheese.
