Chicken stir fry is a quick and easy dish that is sure to please the fussiest of eaters. There’s chicken for the meat lovers, a bit of veg to keep it healthy and NOODLES for the noodle slurpers to enjoy.

I love that you can rummage through your fridge and see what vegetables you have and throw them all in, it means you can make it taste different every time you have it.

One of my kids doesn’t like spicy foods so I have kept this kid friendly by using delicious oyster sauce.

Cook: 10 minutes

Serves: 4

 

Ingredients

  • 250 g chicken, sliced
  • 1 zucchini, sliced
  • 1 onion, sliced
  • broccoli, cut into small florets
  • 1 capsicum, sliced
  • 1-2 carrots, sliced
  • 500 g hokkien noodles
  • oyster sauce
  • 1 tsp oil, for frying

 

Method

  1. Add oil to a large frying pan or wok and heat to a high heat
  2. Follow the packet instructions to prepare the noodles ready for cooking.
  3. Add the onion and fry for 30 seconds.
  4. Add the carrots and fry for 30 seconds.
  5. Add the chicken and fry for 1 minutes.
  6. Add the broccoli, capsicum, zucchini and fry for 1 minute.
  7. Add the noodles and mix till combined then add as much sauce as desired.
  8. Fry until the chicken is cooked through and the vegetables are cooked to your liking.
  9. Serve hot
