Chicken and Broccoli Stir fry with Oyster Sauce

This chicken and broccoli stir fry is so yummy and healthy. I love making a big batch of this and claiming the leftovers for my lunches the following days. It’s a dish where you can really use up any vegetables you have on hand, throw them all in, add the oyster sauce and voila! Fantastic dinner made.

I love to serve this with rice, but you could also serve it with noodles if you’d prefer like this recipe for chicken stir fry with oyster sauce and hokkien noodles.

When I cooked this, I cooked extra rice to turn into Fried Rice.

 

Prep: 15 minutes

Cook: 10 minutes

Serves: 4

 

Ingredients

500 g chicken fillets (thigh or breast), sliced thinly

500 g broccoli, cut into florets

1 onion, sliced thinly

2 carrots, sliced thinly

1/2 capsicum, sliced thinly

1/2 zucchini, sliced

3 tbs oyster sauce

oil for frying

 

Method

  1. Heat a little bit of oil to a high heat in a wok or large frying pan. Add the chicken and cook for 5 minutes until the chicken is cooked. Transfer the chicken to a plate for later.
  2. Heat a little bit more oil to a high heat and add the vegetables, stir fry for several minutes until the vegetables are cooked but still have some crunch. Return the chicken to the pan.
  3. Pour in the oyster sauce and stir fry until heated through.
  4. Serve the stir fry with rice or noodles.
