Cheesy Potato Bake

There’s something decadent about a rich, creamy, indulgent potato bake. It’s real comfort food at its best. Potato bake goes well with all meats, it’s cheesy, creamy, deliciousness really adds something to meals like roast pork, beef and chicken. Potato bake is a regular staple at any BBQ and BBQ’s would not be the same without it.

Everyone has their own version of how to make a potato bake, but this is my go to recipe for a standard potato bake. I like that you don’t need to show it much love for it to bake into a culinary triumph. You can spend ages thinly slicing the potato or you slice the potato a bit chunky and it still ends up a delicious dish of potato goodness.

This cheesy potato bake would go perfectly with  roast pork with crackling or roasted lemon chicken with a vanilla magic cake for dessert.

 

 

Prep: 15 minutes

Cook: 60 minutes

Serves: 4 – 6

 

Ingredients

  • Approx 1 kg potatoes
  • 100 g bacon, diced
  • 300 ml cream (approx)
  • 100 g cheese, grated

 

Method

  1. Preheat oven to 180C and grease a baking dish.
  2. Wash and peel (optional) your potatoes. Slice thinly.
  3. Place a layer of potatoes in the bottom of the dish and sprinkle some bacon on top. Repeat until all the bacon and potatoes are layered. (Or, you could put half the slices of potatoes down, put a layer of bacon and top with the remaining potatoes).
  4. Pour the cream evenly across the top of the potatoes.
  5. Sprinkle the cheese across the top.
  6. Bake for 60 minutes until golden and the potatoes are cooked. You can prevent the cheese from browning too much by placing a sheet of aluminium foil across the top of the potato bake for the first 30 minutes. Remove it for the last 30  minutes.
