Carbonara Pasta Bake

Pasta bakes are a great dinner because they are easy to make, there is usually leftovers for lunch the next day and most people really enjoy them.  You can use this carbonara pasta bake as a main or as a side dish. This carbonara is great as it is, but is also something that is easily modified. You could try adding chicken and mushrooms, or spinach next time.

 

Prep: 10 minutes

Cook: 40 minutes

Serves: 6

 

 

Ingredients:

  • 500 g pasta spirals
  • 1 onion, diced
  • 150 g bacon, diced
  • 2 eggs, whisked
  • 600 ml thickened cream
  • 1 cup cheese, grated
  • 1 tsp garlic powder
  • 1 tsp oil
  • salt, to taste

 

Method

  1. Cook pasta spirals according to packet directions, drain and then return to the saucepan.
  2. While the pasta is cooking, preheat the oven to 200C and grease a large baking dish.
  3. Heat the oil in a frying pan over medium heat, add the onions and bacon and cook for 5 minutes until the onions are soft and the bacon is starting to crisp.
  4. Add the onions and bacon to the saucepan with the pasta. Add the eggs, cream, garlic, salt and half a cup of cheese. Stir well to combine.
  5. Transfer the mixture to the baking dish and top with the remaining cheese.
  6. Bake for 20 minutes until golden.
