Butterscotch self saucing pudding
On a cold night when you’re family wants nothing other than a sweet treat after dinner, this butterscotch self saucing pudding should be your go to dish. It’s easy to make, it tastes great and it uses ingredients already in your pantry.It takes no time at all to prepare this sweet dessert so why not try it today? Or, if you’re after something a bit chocolately then you could try the chocolate self saucing pudding instead. Both are quick and easy to make and equally as delicious as each other.

Prep: 10 minutes

Cook: 45 minutes

Serves: 4-6

 

Ingredients

  • 3/4 cup brown sugar
  • 1 1/4 cups SR flour
  • 100 g butter, melted
  • 1 egg
  • 1/2 cup milk
  • 4 tbs golden syrup
  • 1 tbs cornflour **
  • 1 1/2 cups boiling water

 

Method

  1. Preheat your oven to 180C. Grease a 6 cup capacity ovenproof dish.
  2. In a bowl, combine 1/4 cup brown sugar and the flour. Add the butter, egg, milk and 2 tbs of golden syrup. Stir to combine.
  3. Spoon mixture into your prepared dish.
  4. Combine the remaining sugar with the cornflour and sprinkle it evenly across the top of the pudding.
  5. Combine the boiling water with 2 tbs of golden syrup then pour it gently over the top of the pudding.
  6. Bake for 40- 45 minutes until golden on top and when you insert a skewer into the centre of the cake it comes out clean
 **cornflour was not on our shopping list this month. If you do not have cornflour in your cupboard you can substitute this with flour.
