Bubble and Squeak

Bubble and squeak may seem basic, but it can be a wonderfully delicious addition to any meal, you can even have it as your main with a salad. You can deliberately cook the vegetables to make it, or you can use up your leftovers so it’s different each and every time. Have fun with it, it’s worth it!

 

Prep: 10 minutes

Cook: 20 minutes

Serves: 5-6

 

Ingredients

  • 400 g potato, mashed
  • 2 cups mixed vegetables, cooked and cooled
  • 2 eggs
  • 1 cup breadcrumbs
  • salt, to taste
  • 1 tsp oil

 

Method

  1. Combine the potato, vegetables, eggs, breadcrumbs and salt in a bowl and mix well to combine.
  2. Using your hands, divide the mixture into 10-12 patties. Cool patties in the fridge for 30 minutes prior to cooking.
  3. Heat oil in a frypan over medium heat, add the patties and cook for approx 5 minutes until golden and cooked through.
  4. Serve hot
