Broccoli and Potato Soup

Broccoli and potato soup doesn’t sound like the most appealing soup in the world but it’s actually pretty fantastic. Yes, the soup is yummy. I know, I would have thought that taste was the most important thing about anything I was cooking for dinner but don’t be fooled, the star of the soup was the colour. The kids absolutely loved that this soup is GREEN. In fact, the soup is now called green soup in my house, not broccoli soup.

I think this soup is delicious but the fact that the kids ask for it makes it even more of a winner to me!

 

Prep: 5 minutes

Cook: 30 minutes

Serves: 6

 

Ingredients

  • 1 onion, diced
  • 1 kg broccoli, cut into florets
  • 2 large potatoes, diced
  • 2 cups of vegetable or chicken stock
  • 2 cups water
  • 1/2 tsp garlic powder
  • 1 tsp oil
  • salt and pepper

 

Method

  1. In a large saucepan, heat the oil to medium heat. Fry the onions for 5 minutes until they have softened.
  2. Add the broccoli, potatoes, garlic powder, stock and water to the pan. Increase the heat and bring the soup to a boil. Cover the pan, reduce the heat to low and simmer (stirring occasionally) until the potatoes are soft. Remove the pan from the heat.
  3. Using a stick blender or a blender, blend the ingredients until they are smooth.
  4. Return the soup to the saucepan and simmer for a further 5 minutes or until heated through.
  5. Season with salt and pepper and serve with toast or fresh bread.
