Bacon and Vegetable Impossible Pie

What’s impossible about it? Absolutely nothing! It’s easy to make and incredible to see that when it’s baking it forms its own base. It shouldn’t be called an impossible pie, it should be called an incredible pie.

This pie is fantastic for making when you’re in a rush, you can throw the ingredients together in about 5 – 10 minutes and let the oven do the rest. It’s great reheated or served cold the next day.

I like to make one for lunches and slice it up to go on my sandwiches.

 

Prep: 10 minutes

Cook: 35 minutes

Serves: 4-6

 

Ingredients

  • 4 eggs
  • 1/2 cup SR flour
  • 100 g bacon, diced
  • 1/2 cup  mixed vegetables
  • 1 1/2 cups milk
  • 65 g cheese, grated (optional)
  • salt, to taste

 

Method

  1. Preheat oven to 180C and grease a pie dish.
  2. Add all ingredients to a large bowl and whisk well to combine. The mixture may have a few lumps in it and that’s ok.
  3. Bake for 30-35 minutes until the pie is golden and the centre doesn’t jiggle when it’s moved.
