Who thinks they don’t have enough time to have a healthy breakfast each morning? This breakfast dish is something you can prepare the night before and leave in the fridge until you’re ready to eat it. Simply put it in the microwave for 30 seconds or serve it cold, and breakfast is done. I told the kids it was “breakfast cake” and they loved it. I also put some into a container so my shift working husband could take it to work with him.

You can eat it as it is, you can cover it in milk like cereal, or top it with cream and fruit. The choice is yours!

Note: I have made this many times, you can change the fruit to whatever you have on hand (I do not recommend citrus). My favourite way is as per the recipe below, cooking it with apples.

If you’re more in the mood for a hot breakfast that doesn’t include oats, you could try these cheesy eggs on toast or a pancake stack.

Prep: 10 minutes

Cook: 30- 40 minutes

Serves: 8

  • 3 cups rolled oats
  • 3/4 cup brown sugar
  • 2 cups milk
  • 1/4 cup butter, melted
  • 1 egg
  • 1 tsp cinnamon
  • 1/2 tsp salt
  • 2 apples, peeled, cored and chopped (optional)
  • 1 cup sultanas (optional)

  1. Preheat the oven to 180C and grease a large baking dish.
  2. Place the apples on the bottom of the dish.
  3. Combine the other ingredients in a bowl and mix well. Pour the mixture over the top of the apples in the baking dish and level the top.
  4. Bake for 30-40 minutes until the top is golden and the oats have set.
